You might be thinking, pudding for breakfast? And I get it! I did too. I know for some the idea of pudding might seem weird if you’re used to eating classics like scrambled eggs or your favorite cereal. But you can eat pudding for breakfast! Especially when it’s loaded with actual nutrients…not sugar. Plus, the perfect blend of fats, fiber and protein will keep you full until snack time.
Health Benefits of Chia Seeds
Now that you know chia seed pudding is a healthy choice that will keep you full longer than 30 minutes, let’s take a look at one of its main ingredients: chia seeds. Chia seeds are considered by many to be a true superfood.
They are loaded with essential nutrients like:
- omega-3 fatty acids
- calcium,
- potassium
- manganese
- fiber
- protein
They have been linked with improving heart health, building stronger bones, promoting digestive health, regulating blood sugar, and improving skin appearance.
21 Day Fix Chocolate Coconut Chia Seed Pudding
- 1 Can Canned Coconut Milk
- 1/3 Cup Chia Seeds
- 1 Tbsp Cocoa Powder
- Splenda to Taste (or 1 Tbsp Maple Syrup)
Whisk together canned coconut milk, chia seeds, cocoa powder, and sweetener.
Serve immediately or chill if you prefer
Substitutes And/Or Additions to Try
While there aren’t a ton of alternatives or additions to use in this recipe, here are a few ideas.
If you’re not a huge fan of coconut, then you could use yogurt instead of the coconut milk. Otherwise, there aren’t many healthy ingredients that will thicken the pudding enough for the right consistency.
Instead of chia seeds or in addition to for added nutrients, you could add in flax seeds or hemp seeds.
For the maple syrup, you could try honey or stevia syrup.
And lastly, you could leave the cocoa powder out if you want a more pure coconut-y flavor.
